A great addition to your weekly dinner routine (they’re easier to make than you think!)
500g lamb mince
1/2 cup fresh breadcrumbs
1 egg
1 onion, grated
1 small zucchini, grated
1/4 cup pine nuts, toasted
2 tbsp parsley, chopped
1 tbsp Worcestershire sauce
2 tsp thyme leaves, chopped
200g mozzarella
1 cup tomato pasta sauce
Rocket leaves, to serve
Oven baked chips, to serve
Step 1
Preheat oven to hot, 200C.
Step 2
In a large bowl, combine mince, breadcrumbs, egg, onion, zucchini, pine nuts, parsley, sauce and thyme. Season to taste. Roll into 4 oval-shaped meatloaves.
Step 3
Cut half of the mozzarella into 8 cubes. Grate remaining cheese. Press 2 cubes of cheese into the centre of each meatloaf, re-shaping. Place in a baking dish.
Step 4
Bake for 25-30 mins until browned. Pour over pasta sauce and sprinkle with cheese.
Step 5
Bake for a further 5-10 mins until cooked through and cheese has melted. Serve with rocket and chips.
